Mexican food fiesta. Chilaquiles If the idea of eating leftover tortillas doesn’t
sound appetizing, you’ve probably never had chilaquiles. The tortillas, once stale, are sauteed in
a pan with red or green sauce, and sometimes topped with melted cheese or sour cream. While chilaquile’s simplest preparations are
actually popular for breakfast in Mexico, variations with meats and vegetables appear
on many lunch and dinner menus. If you like nachos, chances are you will enjoy
chilaquiles — though the texture is different, they have a similar flavor profile. Chalupas A popular street food in central Mexico, chalupas
are named for the canoes navigated by the ancient Aztecs through the waterways of what
is now Mexico City. Corn tortillas are fried in lard for just
a few moments. The result is a still pliable, not-quite-crispy-as-a-taco
base that is topped with favorites like fresh salsa, stewed meats, and cheese, and then
served open-faced. Once you have one, though, you may not be

one is caldo de pollo, otherwise known as chicken soup. Popular soups you’ll see on an authentic Mexican

soup), and sopa de frijol (black bean soup). A good, truly Mexican restaurant will take
their soup very seriously, so ordering a bowl before your meal is definitely recommended. Tamales In ancient Aztec times, tamales varied in
size and wrapping, depending on what was available. Banana leaves, tree bark, and sometimes even
scraps of fabric were used to wrap the tamales before they were steamed in underground pits. Modern-day tamales, on the other hand, are
created by making dough from hominy flour and wrapping it in a corn husk along with
fillings like meat, cheese, and vegetables. The tamales are then steamed in large pots
on the stove. A time-intensive process, tamale making is
often reserved for holiday celebrations, with groups of family and friends spending the
entire day making them at a social event known as a “tamalada.” “Delicious tamales everyone!” Chile relleno One of Mexico’s most popular and traditional
dishes, the chile relleno originally hails from the colonial city of Puebla. The city’s namesake poblano pepper is charred
and peeled, and either stuffed simply with cheese, or with a variety of fillings. The pepper is then dipped in an egg batter,
and fried to perfection. Traditionally topped with red salsa, eclectic
variations can be seen on many a menu, depending on regions and tastes. Chile rellenos are an ideal dish for those
looking for an authentic Mexican dish with a little heat. Mole The name literally means “sauce,” but mole
means so much more than just sauce to the people of Mexico, with recipes differing widely
from region to region, and even family to family. If you spy mole on a Mexican restaurant menu,
chances are that it will be one of the darker varieties, like mole poblano or mole negro. The thick, savory sauce is painstakingly slow-cooked
over hours or even days, and may contain a mixture of chilis, nut pastes, garlic, dried
fruits, spices, and chocolate. Try mole served over chicken or turkey. Mole poblano de guajolote (poblano pepper
mole with turkey) is considered by many to be the national dish of Mexico. Barbacoa The word barbacoa, which means “barbecue,”
can refer to any slow-roasted, barbecued meat. For example, at the popular chain restaurant
Chipotle, the barbacoa served is made from beef. Traditional barbacoa, however, usually refers
to sheep or goat, which is cooked over an open fire, or in a covered fire pit. This deliciously charred meat is then topped
with a variety of salsas or mole. If you see barbacoa on a menu, be sure to

  1. Sorry, just like Cacao, Banana's are not from Mexico originally and banana's are from the jungles in India, China, and Southeast Asia. So the Aztec's couldn't have used Banana leaves for food preparation, they used corn husks which I think is so much better and not bitter.

  2. Living in San Diego, this is truly one way in which I'm blessed. Sure, I can go to Green Burrito, DelTaco or Taco Bell, but why? In less than a mile, there are 4 taqerias near my home. Genuine Mexican food for about the same money as the chains, and sooooooo much better.

  6. This is a damn joke. Most "Mexican" restaurants outside of Mexico don't even have tamales. Do you have any idea how much effort goes into making those things?

  8. Yeah my family can make these and they are delicious. My mom makes amazing chilaquiles. One time we were only making enough for a few of us, my brother told my aunt then word spread to all my immediate family. Everyone came and my mom had to make extra xD. Like we have to keep quiet sometimes or the whole family wants to come over to eat. I mean none of us mind that, but my goodness the dishes hahaha.

  9. I am surprised by how accurate this video is. You actually listed real Mexican food. My fellow Mexicans tend to act very defensive whenever variates of our cuisine cooked abroad are mentioned, yet they have no issue eating tweaked versions of sushi and pizza, lol. Food is food, just enjoy it.

  10. I don't think I have ever had any barbados that did nit taste like plain slow steamed meat. It's pretty underwhelming compared to U.S. barbecue. I don't think its even the same thing and that may be part of my anticipating it to be more flavorful. I'm talking about Lexington, NC barbecue, not the crap with the opaque sugary  glop on it btw.

  14. Chiles rellenos are high up in my favorite dishes of any sort. They're usually the very first entree I try at any Mexican restaurant that's new to me.

  15. FLAN!!! If it is good flan, it won't have a lot of bubble holes in it. It should be creamy to your tongue. The caramel sauce should be a nice amber. Then you sprinkle Triple Sec over the top. Aahee! To die for!!! Haven't had good Flan since I left AZ. If the restaurant does not have good Flan, I never go back. Flan is not a pudding, it is a delightful custard.

  17. Just eat at a NOrth American Mexican restaurant. In search of 'authentic' Mexican food, when we went to Cancun, we always took a cab into the city. Food was terrible. Maybe because the quality food was not affordable by the native population? Either way, the best food was on the island the tourist area.

  20. If it's served on a flat fried tortilla, it's probably a tostada, not a chalupa. It's hard to find a good tamale that tastes worth a darn, they're usually too bland. But I do love a good chili relleno!
    Chilaquiles is a new one to me, though. I'll have to see if anyone local has those.

  22. I got barbacoa tacos from chipotle once and got some type of food poisoning. I mean in the bathroom ALL night with severe stomach pains. Haven’t eaten there since and probably won’t ever again.

  25. Gotta love how these english speaking americans thinking their so called "research" will shed light to the rest. More than likely going to their resturants down the street. Leftover tortillas? Where the heck did you go or who told you that? If you like nachos you might find this different since we use mostly queso cotija or monterey and red, green, or mole for sauce. Plus we also put onions and of course huevos estrellados. Authentic soups… You are missing a whole bunch that we make and which a far more popular. Mole may have chile? Dear gawd….! Mole is made with different spices thay include chile! Also we eat chicken not turkey you idiot american. Re-yen-nos! Damn!

Southern Cali and Tijuana, baja Cali Tacos al pastor, de Cabeza, de Lengua, de adobada etc…. burritos,Carne Asada fries, tortas, sopes, chilaquiles, birria, carnitas, menudo, quesadillas, pozole, mole etc etc etc and the refreshing horchata,tamarindo, jamaica drinks. Mexican food and the varieties of rich foods.There is just so much to list but i leave you with. this short list, there is just endless of the mexican food because it's from every region of México.Gotta Love the tortas de tamal in mexico city and the high kitchen Level in Mexico City and Southern Cali apart from the fast food taco shops.

  27. "Relleno" is pronounced "re-YAY-no," not "re-YAY-nyo." There is no tilde over the "n," as there is in "jalapeño."
