Pork and Shrimp Egg Rolls


Hi guys, I’m Seonkyoung Longest.
Welcome to “Asian at Home”! Today, I’m going to show you how to make
Pork & Shrimp Egg Rolls! YAY~!! Thank you so much for requesting egg roll, spring roll
or lumpia recipes, all of them will come very soon, but today I’m going to show you pork
& shrimp egg roll. Let’s get start it. First we need to prepare our pork. I have
4 oz of ground pork right here. I’m going to season and marinate with 1 teaspoon of
soy sauce. 1 teaspoon of rice wine, this is optional you can skip it. 1/4 teaspoon of
white pepper and mix throughly. Set aside the pork and next protein I’m going
to use is shrimp. Obviously, pork & shrimp egg roll. You can cut up into little pieces
and add into the filling mixture, but I really to just put whole shrimp into the egg roll.
That’s how I like it. Surprise~ When you bite into it! So I’m just going to set aside right
here and let’s cut up some our vegetables. First, 3 cloves of garlic, finely chop. And
about 1 teaspoon of finely chopped ginger. 8 oz of regular green cabbage. I’m just going
to cut it really really finely, almost like shredded. 4 oz of carrot, I’m going to julienne. 2 to 3 green onions, just chop it. 2 oz of bamboo
shoot. Julienne bamboo shoot so they are same size as carrot and cabbage. And 4 oz of beansprouts.
I’m just going to roughly cut into.. maybe like 3 to 4 times to make them a little more
shorter. So it’s easier to wrap it up later. Alright, all the ingredients are ready, some
of them need to be cooked. So, let’s go on to the stove.
Heat a wok over high heat, and add 1 teaspoon of cooking oil. Add marinated pork and cook
for 1 to 2 minutes. While you are cooking the pork, keep breaking down with a wooden
spoon or a spatular. Remove from heat and place into a large mixing bowl.
Into same wok, add 2 teaspoon of cooking oil along with chopped ginger and garlic. Stir
fry them until you can smell the fragrance, about 30 seconds to 1 minute. Stir in cabbage
and carrot and add 1 teaspoon of salt. Cook everything together, until the vegetables
are soften but still have a little crunch bite into it. About 1 to 2 minutes. Remove
from heat and add into the large mixing bowl with the pork. Now into the mixing bowl I’m
going to add julienned bamboo shoot, chopped beansprouts and green onions. I didn’t cook
those 3 vegetables ahead because they are delicate enough. Alright, mix them all together. Let your filling to be cooled so it’s more easier to handle and meanwhile let’s talk
about the egg roll wrapper. Today I’m using the egg roll wrapper that I got from a local
grocery store. But you can use any type of egg roll wrapper that you can find at your
local grocery store or an Asian market. You need some kind of glue to close up the egg
roll, because you don’t want it to be falling apart while you’re cooking. So for that, you
can use beaten egg, flour water or cornstarch water. Today, I’m going to use cornstarch
water. All you need is 1 tablespoon of cornstarch and 4 tablespoons of water mix it all together.
Place your egg roll wrapper front of you like diamond shape. And add about 2 to 3 tablespoons
amount of the vegetables and pork mixture on to the third of egg roll wrapper that close
to you. So you have 2 thirds part that you can roll it. On to the vegetable mixture I’m
going to place this 2 shrimps and brush with cornstarch water or egg wash if you are using
it. And roll it about half and then fold the sides. And roll it all the way. Tightly, roll
it tightly. And repeat until you have 12 egg rolls or all your ingredients are gone. I have only a couple of egg rolls to wrap, so this is perfect timing to heat your frying
oil to 350 to 375 degree. Fry the egg rolls for 3 minutes, or until the surface is nice golden brown. And that amount time, the shrimp will be cook perfect. When the egg roll is
done cooking, place on a cooling rack or paper towel lined plate. Alright, my egg roll is
just perfection, you can see! How I like to serve is actually cut into half in diagonal
angle so everybody can see what’s inside, but you can obviously serve as whole with
your favorite dipping sauce. You can serve with any type of light soy sauce, sweet chili
sauce or duck sauce literally anything you can enjoy with it. (Jacob) Ah, it’s so delicious! (Jacob) A little hot! (Jacob) So much better than Chinese take-out. (SK) Oh, really?
(Jacob) Sorry Chinese restaurant~ (SK) You can’t even compare. Uh, uh! It’s

  6. 1 lbs ground pork, 2 tsp soy sauce, 1/2 tsp black pepper, 1/4 tsp salt, 2 tsp chicken powder, 4 garlic cloves Finley chopped, 2 tsp ginger Finley chopped, 16 oz shredded cabbage, 8oz (1 large)carrots finely Julian, 3 green onions chopped, 8 oz bean sprouts 1inch chopped, 4 oz yellow onion Finley shredded, 8 oz water chestnut chopped, olive oil, lumpia wrappers or spring roll. Cook pork 1-2 minutes high heat then remove from heat to a large mixing bowel. Cook garlic, onion and ginger 30-60 seconds medium heat add in carrots, cabbage and 1/2 tsp salt- cook until slightly soften about 2 minutes then remove from heat. Move to mixing bowl with pork, add bean sprouts, green onions, and water chestnut and mix. Let cool down. Then wrap in lumpia wrappers and form a seal with egg wash and fry.
