    Pestle and mortar is the traditional way but of course use a food processor. In commercial production in Italy, cashew nuts are often used because they're cheaper and make hardly any difference to the taste.

    A good snack for a loon (or definitely for me) is just to boil some linguine, drain, stir in a heaped teaspoon of pesto. I find that's quite enough – there's some strong flavours in there.
