बिना तेल के छोले बनाने का आसान तरीका | Oil Free Chole Recipe | Punjabi Chole Recipe

we are preparing oil-free chole/chickpeas, a healthy option for those who wish to avoid oil for any reason first, we will prepare chole masala, the spice mix for the chole we have here some whole spices 1 black cardamom, crushed, 8-10 peppercorns, 5 cloves, 2 tsp sabut dhania/coriander seeds, 1 tsp jeera/cumin seeds 2 tej patta/bay leaves, 2 whole dry red chillies,1-inch dalchini/cinnamon, 5 green cardamom, a small piece of jaiphal/nutmeg, 1 piece javitri/mace we will dry roast these spices now keep the heat on medium and put the spices in a pan keep stirring them constantly. once the pan is a bit hot reduce heat to low-medium and dry roast them until they become aromatic then transfer to a plate and let them cool down completely put them in a grinder jar and add in 2 tsp anardana/pomegranate seed powder, 2 tsp amchur/mango powder, 2 tsp kasuri methi/dry fenugreek leaves add in 2 tsp anardana/pomegranate seed powder, 2 tsp amchur/mango powder, 2 tsp kasuri methi/dry fenugreek leaves grind to a fine powder the chole spice powder is ready we will now start preparing the chole keep the pressure cooker on medium-low heat put in 1 medium-sized chopped onion we will roast it without oil instead of oil, we will use a tbsp of water each time the onion gets dry and starts to stick to the bottom of the cooker add in 1/2 tsp salt as well keep stirring constantly saute until the onions turn light brown add a tbsp water whenever the chopped onion gets dry and carry on sauteeing adjust heat as per need after a minute of sauteeing the onion put in 1 tsp ginger paste and 1 tsp garlic paste also 1 chopped green chilli and add water as and when needed but a tbsp at a time and carry on sauteeing the masala until it turns brown the masala has turned brown we used about 5-6 tbsp water we have here some ground spices here 1/2 tsp red chilli powder, 1 tsp of salt, 1 tsp coriander powder and 1/2 tsp garam masala add these to the masala reduce heat to low and saute the spices using water as needed as we did earlier saute the spices for about 1 minute the spices are roasted as well. we will add in the chickpeas now we have here 1 cup large-sized chole/chickpeas and 1/2 cup chana dal/split & skinned brown chickpeas these were soaked in water overnight and just before using them now the water was drained out were washed well in running water the chana dal will help make the gravy thicker which is what we want put them in the masala and stir until everything is well combined since the soaked ingredients are wet they will mix easily with the masala we will dry roast the chickpeas for about 5-6 minutes keep the heat around low-medium if required you may add water, as we did earlier, a tbsp at a time otherwise carry on dry roasting them we have used large-sized chickpeas for making the chole dish as the dish not only tastes better but also looks better after roasting the chole for about 3 minutes add in 2 tbsp of the chole masala powder which we had prepared earlier. you can add more or less as per your taste mix well and roast the chole for about 2 minutes more store the remaining chole masala powder in an airtight bottle and use it whenever you prepare chole next time after about 5 minutes the chole are roasted add in 500 ml water and reduce heat to low-medium and let it come to a boil on a side burner, we have kept 500 ml water in a pot keep the heat around low-medium and let the water come to a boil the water has started boiling. add 2 tsp tea leaves to the water and simmer the mixture for about half a minute give a good stir and strain out the tea into the roasted chole in the pressure cooker stir well, raise the heat to high and close the pressure cooker let the pressure cooker whistle blow at the whistle reduce heat to low and cook for 20 minutes more put off the heat after 20 minutes and let the cooker depressurize on its own then open the cooker check the chole once you open the cooker. they will be soft like this transfer the chole to a pan keep the heat on medium and cook the chole until they are thick keep stirring in between and more frequently as the chole thicken put in about 1-2 tsp cilantro now keep heat on medium and after about 5-7 minutes the chole have thickened to our liking the chana dal has mixed well to form a nice textured thick gravy put off the heat and transfer the chole to a serving dish garnish with some ginger juliennes and some chopped cilantro here is our dish of the day – oil-free chole this is a completely oil-free dish. moreover, we have not used any baking soda to soften the chole this makes this dish a very healthy one for those wanting to go oil-free. it just takes a little more time cooking it do try it and share your experience you can have the chole with poori,
