Thai Vegetable Soup
Recipe inspiration:
This gluten free Thai Vegetable Soup can be made in a jiffy with all natural, easy to find ingredients. It’s a wonderful dish to prepare for dinner on a chilly night when you are pinched for time. Get the children to trim and chop the mushrooms for you to speed up the process.

I’m definitely going to be trying this one Elana. Can you believe that of all those recipes only a couple are Paleo? Yours rocks!
This looks easy, quick, and healthy, three requirements for any soup I make.
Thanks for the inspiration!
Another beautiful recipe, Elana! Naturally gluten free and wonderfully delicious. :-)
Best of luck!
Shirley
Just in time for the cool temps and thunderstorms today. I always have Pacific Foods Broths in the pantry for spontaneous soup days. Thanks for the great gluten-free recipes, Elana. You just keep them coming.
Great veggie soup recipe, Elana! Perfect for those crisp autumn evenings.
Elana! You know I’m all over this one! Fabulous, I’ll have this for lunch tomorrow.
I am excited to try this recipe. My daughter loves Thai. Do you have a suggestion for something to replace the cilantro? I love it but it is the only herb my hubby cannot stand :(
i will be trying that too…already got the ingerdients!
This is one fantastic soup! My 5 year old LOVED it. Easy to make.
Wow, this sounds simple and delicious. I can definitely see my kids eating it too – minus the mushrooms :) They’re not quite into mushrooms yet. Thanks for the recipe and good luck with the contest Elana.
thank you!
Thai & Indian are my favorite cuisines, & this sounds quick, easy, healthy & ECONOMICAL!!!!
I just made this tonight and it was DELICIOUS! So fresh tasting – a great fall soup.
Thanks for making this gluten free and dairy free. I’m definitely making this, but I might add some chicken.
This looks like yet another wonderful recipe Elana. I’ve always made this with chicken stock, but the vegetable broth sounds great… Thanks!
Congrats Elana!!!
Thanks everyone!
I am going to try this as well since we have a celiac @ our house. As for the comment about a sub for cilantro, I would suggest basil since it is used so much in Thai cooking. That is what I am planning on trying, since we do not care for it as well.
Elana….I voted and printed this out to make for dinner! Thanks and good luck!
I like this recipe a lot – it’s easy to make, very healthy and I think delicious. I’ll try it tomorrow night. Thanks, Elana
Angela — nothing else has that cilantro taste, but if you can find some Thai or Asian basil, that might work, or mince some reg. basil and mint together.
a touch of fish sauce (nam plaa) would be good in this, as well as a bit of palm sugar.
I’m pretty sure this is tasty! It is very similar to a soup I make (crave). Hint: add a few tablespoons of PB and a dash of crushed red pepper and you’ve just upped the pizzazz factor.
we love this soup I made it this past weekend and had to vote for it. Love your blog Elana!
WOW! What a soup! Quick, delicious and oh so easy. Thanks, Elana
Made this last week and it was devoured by all in my house, including my 12 year old who is a fierce anti – gluten eater! Thanks Elana for a great recipe and a great website.
I love love love gluten free & dairy free Thai food! And cilantro!
Can’t wait to make this soup!
: )

I love all your recipe but this one is just greaat!!!! I love it.
Go ahead Elana, and give my love to your kids and bob.
always looking for new vegetable soups and will definitely give this one a try!
Hi Elana,
Made your delicious offering tonight for Larry and I and it was a hit!!! Half way through eating our bowls of soup Larry jumped up, went in the fridge and pulled out some scallops that he added to the remainder of the soup on the stove. Once done, we had round two with a little happy added.
I just voted for your Thai Vegetable Soup. I can’t wait to taste it. I’m craving it and I’m going to make it for supper tonight. Elana, thanks for your great recipes. Have a blessed week.
TOTALLY AWESOME! Even my 11 year old picky eater LOVES it!
This looks so beautiful! Keep up the great work and recipes!!! Jen
Dear Angela: The usual substitute for cilantro is flat-leaf parsley.
