Thai Vegetable Soup

This gluten free Thai Vegetable Soup can be made in a jiffy with all natural, easy to find ingredients. It’s a wonderful dish to prepare for dinner on a chilly night when you are pinched for time. Get the children to trim and chop the mushrooms for you to speed up the process.

Recipe ingredients:

2 tablespoons olive oil
1 onion, finely chopped
2 cups sliced mushrooms, trim off bottom of stems
1 quart Pacific Foods Organic Vegetable Broth
1 cup coconut milk
1 head broccoli, trimmed and chopped
1 tablespoon fresh ginger root, minced
2 tablespoons lime juice, freshly squeezed
1/4 teaspoon sea salt
1/2 cup cilantro, minced

Cooking instructions:

Warm oil in a large saucepan over medium heat
Add onion, stirring frequently until softened, about 10 minutes
Add mushrooms and saute for 5 minutes
Stir in broth and coconut milk and bring to a simmer
Reduce heat to medium, add broccoli and ginger and cook until broccoli is bright green, 3-5 minutes
Stir in lime juice and salt
Ladle soup into bowls and garnish with cilantro
Serve

    I am excited to try this recipe. My daughter loves Thai. Do you have a suggestion for something to replace the cilantro? I love it but it is the only herb my hubby cannot stand :(

    I am going to try this as well since we have a celiac @ our house. As for the comment about a sub for cilantro, I would suggest basil since it is used so much in Thai cooking. That is what I am planning on trying, since we do not care for it as well.

    Angela — nothing else has that cilantro taste, but if you can find some Thai or Asian basil, that might work, or mince some reg. basil and mint together.

    a touch of fish sauce (nam plaa) would be good in this, as well as a bit of palm sugar.

    I’m pretty sure this is tasty! It is very similar to a soup I make (crave). Hint: add a few tablespoons of PB and a dash of crushed red pepper and you’ve just upped the pizzazz factor.

    Hi Elana,
    Made your delicious offering tonight for Larry and I and it was a hit!!! Half way through eating our bowls of soup Larry jumped up, went in the fridge and pulled out some scallops that he added to the remainder of the soup on the stove. Once done, we had round two with a little happy added.

    Dear Angela: The usual substitute for cilantro is flat-leaf parsley.
